Water seems harmless. You turn on the faucet, it comes out clear, and everything looks fine. But inside your commercial kitchen equipment, that same water can be carrying minerals that slowly build up, restrict components, reduce performance and create expensive problems.
Hard water doesn't look dangerous. That's part of the problem. For restaurants running steamers, combi ovens, ice machines and other water-fed equipment, proper water filtration isn't just about water quality. It's about protecting the equipment you've already invested in.

What Exactly Is Hard Water?
Hard water contains elevated levels of dissolved minerals, primarily calcium and magnesium. Those minerals may not seem like much when you're looking at a glass of water. Your equipment has a different opinion.
When hard water is heated or used repeatedly inside commercial equipment, mineral deposits can accumulate as scale in steam generators and boilers, water lines, spray nozzles, solenoid valves, heating components, ice machine components, water reservoirs and internal plumbing.
Scale can also act as an insulator, interfering with heat transfer and forcing equipment to work harder to accomplish the same job. More scale can mean more cleaning, more service, more downtime and more money.
Steamers, Combi Ovens & Ice Machines Feel It Fast
Some of the most water-dependent equipment in your kitchen is also some of the most expensive — think Groen, Cleveland, Rational, UNOX, Hoshizaki and True. Even the smartest machine in the kitchen can't turn bad water into good water.
Steam-generating equipment constantly introduces water into a hot environment, which makes water quality especially important. And your ice machine takes the water coming into your building and turns it into something you're serving directly to customers.
Your ice machine doesn't get to choose its water. It gets whatever the building gives it. That's why the filtration system in between matters.

Having a Filter Doesn't Mean You're Protected
This is the part that gets missed. Having a water filter installed does not automatically mean you have the right water filtration.
We see filtration systems that are:
- Overdue for cartridge replacement
- Undersized for the equipment
- Not matched to the application
- Not appropriate for the property's water conditions
- Serving more equipment than the system was sized to handle
- Forgotten until the equipment starts having problems
A filter can be mounted on the wall and still not be doing the job you think it's doing. It's a little like having a smoke detector with a dead battery. Technically, it's there. Practically... not much help.
And filtration isn't necessarily a "set it and forget it" system either. Cartridge life can depend on the type of filtration, the amount of water being used and the conditions of the incoming water. If you have no idea when yours was last changed, that's worth finding out.
The Right Filter Depends on the Equipment
There's another important distinction: water filtration isn't one-size-fits-all. Depending on the application, filtration solutions may include sediment reduction, scale inhibition, hardness treatment, carbon filtration, reverse osmosis or a combination of technologies.
Systems from manufacturers such as Everpure and 3M are designed for different foodservice applications and capacities. A small ice machine and a high-volume combi oven operation aren't necessarily going to have the same needs.

Is Your Water Filtration Due for Some Attention?
Take a look at the filtration connected to your steamer, combi oven or ice machine. Then ask yourself:
When was the cartridge last replaced?
Was this filtration system actually selected for this piece of equipment?
Has equipment been added since the system was installed?
Are you seeing recurring scale buildup?
Do you know what your incoming water conditions are?
And perhaps most importantly: do you have absolutely no idea when anyone last looked at it?
If the answer to that last one is yes, it might be time. You don't necessarily need a brand-new filtration system. You may simply need the correct replacement cartridge. Or your existing system may need to be resized, updated or matched more appropriately to the equipment it's protecting.
The point is to address the water before the water starts addressing your equipment for you.
Protect the Equipment You Already Own
Replacing a filter cartridge or upgrading a water treatment system is a relatively small consideration compared with repairing major components — or dealing with an essential piece of kitchen equipment that's down during service.
